During fermentation, it produces important higher alcohols such as fusel oils, which are suitable for storing whisky in wooden casks. The yeast is resistant to alcohol (15 percent ABV). Because of the assimilation of complex sugars, it has very good attenuation, making it the best option for malt whiskies when enzyme additions are not permitted.
